Avocados are my love language. Truth be told, I used to HATE them (I know, criminal). But over the past few years, I've learned how versatile and good-for-you these little nuggets truly are. On a bagel with cream cheese? Sure! Snuck into brownies? Why not. As a boost of healthy fats + creaminess in my morning smoothie? Don't mind if I do! My avocado obsession came to a whole new level when I discovered this book and I HAVE to share some of my favorite ways to use the beloved avo with you all. Literally can't get enough.
Smoothies. Buy avocados in bulk (hello, Costco), wait for them to ripen, cut them into chunks, throw them in a Stasher bag, and pop those babies in the freezer. One of my favorite combos right now is 1 banana, 1/4 frozen avocado, handful of frozen berries, 1/2 cup cauliflower rice, 2 tablespoons of peanut butter, 1 scoop of vanilla protein powder, 1 tablespoon of flax, 1 tablespoon of hemp seeds, and almond milk to thin. Top with granola and goji berries!
Toast. No bread or bagel is complete without an avocado. Basic, I know. If it's toast, give me a fat slice of sourdough, mash some avo, and top with ebtb seasoning + goat cheese. If it's a bagel, I love me some vegan cream cheese, thin slices of ripe avo, and pickled onions. Pure heaven.
Pasta sauce. Blend a ripe avocado with basil, hemp seeds, olive oil, garlic, tahini, and lemon juice for the most bomb pesto. Serve over brown rice pasta and top with extra basil, sun dried tomatoes, and vegan mozzarella.
Salad. Another obvious choice, but my favorite salad right now is baby spinach, avocado, roasted sweet potato, sunflower seeds, goat cheese, and a lemony tahini dressing. You MUST try.
Desserts. Who knew you could throw avocados into literally any dessert or baked good and have it taste amazing? I always toss a ripe avocado into pumpkin/banana bread, brownies, muffins, cookies, you name it. It's extra creamy and gives an added dose of healthy fats + fiber, which I'm all about.
