The BEST Vegan Banana Bread

I've tried many a banana bread in my day and I have to say, this one takes the cake. It's vegan, sugar-free, and totally customizable. Some of my favorite ways to mix things up are adding in dark chocolate chips, blueberries (pictured below), shredded carrot/zucchini, or pumpkin. But the possibilities are literally endless. This loaf also freezes super well, so I like making a couple at a time to have on hand for easy breakfasts! Simply top with a drizzle of almond butter, honey + cinnamon - the best. Recipe below!!

  • Ingredients

  • 1/2 cup applesauce

  • 1/2 cup maple syrup

  • 2 flax eggs (2 tablespoons flax + 5 tablespoons water - let sit for 15 min in fridge)

  • 4 large ripe bananas

  • ¼ cup almond milk

  • 1 teaspoon baking soda

  • 2 teaspoons vanilla extract

  • Tons of cinnamon

  • 1 ¾ cups white whole wheat flour (could sub almond flour)

  • Pinch of salt

  • Directions

  • Preheat oven to 350 and grease a 9x5 loaf pan with coconut oil spray

  • In a large boil, beat the applesauce and flax eggs together. Add mashed bananas + almond milk and mix

  • Add maple syrup, baking soda, vanilla, cinnamon, and salt - whisk to blend. Then, stir in the flour with a big spoon and combine

  • Pour batter into greased loaf pan, sprinkle with cinnamon, and bake for 1 hour. Let sit for 20-30 min before slicing
